THE COLLECTION OF THE
CLOCHERS : THE AUCTION WINES
In Limoux is called Clocher, what is called Clos in Burgundy and Château in
Bordeaux. Indeed the term «Clocher» (belltower) is used to symbolize the
wine from a parcel identified in each village of the appellation, for its intrinsic
qualities and for the quality of its production.
The wine growers selected to represent their village commit for a period
of 5 years to follow precise specifications, regularly controlled by vineyard
specialists.
The grapes from this plot, picked by hand, are then returned to the care of our
wine makers, individually vinify them. During ageing, the «Clochers» wines
are subject to regular tastings, and careful monitoring by our oenologists.
At least, a final selection of barrels that can claim to be auctionned is made
by a tasting commitee composed of 12 independent sommeliers.
Each plot offers a unique wine showing exceptional organoleptic qualities,
representing the quintessence of our appellation. The barrels still being
farmed are presented to the tasting taking place before the public auction,
in the presence of the wine growers, so that the bidders can make their
choice. Buyers wanting to buy a lot during the auction will be delivered a
few month later, at the end of the ageing with a wine bottled and packed
in wooden case, and retain the ability to customize the collar as they want.
